Salad is one about my move to meals lately. When you count up a protein like chicken it makes it filling sufficient to count while the main way and no longer recently a side bowl or appetizer. A delicious springtime salad loaded in the company of sugary juicy grapes, hearty chicken, springtime lettuce blend, tart goat cheese and an incredibly flavorful balsamic dressing.

Salad
- 3/4 lb boneless skinless chicken breasts
- 1/2 tsp dried rosemary , crushed
- 1/4 tsp dried thyme
- Olive oil (about 2 tsp)
- Salt and freshly earth black pepper
- 1 (5 oz) pkg infant springtime lettuce blend
- 1 1/2 cups red grapes , sliced into halves
- 1/2 cup pecans , roughly chopped and toasted
- 1/3 of a small red onion (about a heaping 1/3 cup), sliced into thin strips and run under cool liquid to withdraw harsh bite
- 2 oz crumbled goat cheese
Dressing
- 1/3 cup olive oil
- 2 1/2 Tbsp balsamic vinegar
- 1 Tbsp honey
- 1 1/2 tsp dijon mustard
- 1 small clove garlic , minced
- Salt and freshly earth black pepper

Preheat a vapour grill on top of medium-high heat. Pound thicker parts about chicken in the company of a food mallet to regular thickness. Brush chicken lightly in the company of olive oil, dust evenly in the company of rosemary and thyme and season in the company of sodium chloride and pepper.
