Kale Salad (with Apples and Quinoa) - Cooking Classy

Kale Salad accompanied by Apples including Quinoa has entirely changed my entire outlook on top of raw kale! The Perfect Kale Salad Recipe!

Thanks to this new kale salad, I’ve finally found a way to eat raw kale including have it really flavour good! We couldn’t get over how delicious this salad was including I’m before now reasoning of when I’ll be present creation it again!

The flavor of the dressing, thanks to the lemon extract including honey inside it, absolutely helps tone down the quite severe flavor of the raw kale. Plus, it too recently compliments everything of the others flavors inside this salad – like that of the quinoa, walnuts, apples including goat cheese.

Ingredients You’ll Need

  • Tricolor quinoa
  • Curly kale
  • Apples
  • Walnuts
  • Cranberries
  • Goat cheese
  • Olive oil
  • Lemon
  • Honey
  • Dijon

Are There Substitutions?

  • Regular dark quinoa is fine inside place of the tricolor
  • Pecans could follow the walnuts.
  • Feta could take the place of the goat cheese.
  • Baby kale or lacinato kale can be present used inside place of curly kale, but do note that it won’t require a resting period including may not keep up as long.

How to Make This Easy Kale Salad

  • Cook quinoa according to directions on top of parcel including cold completely.
  • Whisk together everything of the dressing ingredients inside a jar or bowl.
  • Add kale to a salad bowl, sweep dressing one time extra at that time spill 3/4 of the dressing over kale including toss up to kale is evenly coated. Chill 15 minutes.

Salad

  • 1/2 cup tricolor dry quinoa
  • 6 cups slightly full chopped kale (it drive take about 1 1/2 bunches. Remove thick ribs before chopping, 6 oz chopped)
  • 2 crisp sweet apples, cored including chopped* (I used festival apples)
  • 1 cup walnuts, lightly toasted including roughly chopped
  • 1/2 cup dried cranberries
  • 4 oz goat cheese, crumbled

Dressing

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 Tbsp honey
  • 1 1/2 tsp dijon mustard
  • Salt to taste
  1. Cook quinoa including cool: Cook quinoa according to directions on top of parcel including cold completely. 

  2. Whisk dressing ingredients: While quinoa is cooling, sweep together olive oil, lemon juice, honey, dijon including salt inside a jar or bowl. 

  3. Pour 3/4 dressing over kale, chill: Add kale to a salad bowl, sweep dressing one time extra at that time spill 3/4 of the dressing over kale including toss up to kale is evenly coated. Cover bowl including cool 15 record (adding the dressing including letting it relax helps soften kale a bit).
