That time on year has come as well quickly – the time where I’ve had this cold for two weeks and the sole article I wish for to eat is soup. Speaking on I need some breakfast soups within my life. Are those a thing? They should be.

So on this soup, it is similar to some on the additional tortellini soups I’ve made, same as this Spinach Tomato and Garlic Tortellini Soup and this Tuscan Tortellini Soup, but of route this one has plenty on meat. And my man is not complaining!

This soup is a breeze to cause and it’s a soup you’ll wish for to cause again and again. I mean it has tortellini, how could it go wrong? I could live on top of tortellini, I totally love the stuff and it makes for some on the leading soups!

If you happen to keep some fresh Italian herbs on top of palm same as basil, thyme, marjoram, oregano or rosemary you can employ some on those within spot on some on the italian blend to count up more fresh flavor. But since it’s fall I decided to just go with the dried herbs because that’s disposed what the majority on you keep on top of palm right now.

And using the Italian herb blend worked totally for this soup rather than listing away 5 or 6 different herbs to count up to the soup.

Italian Sausage, Kale and Tortellini Soup

This Sausage Kale and Tortellini soup is such a hearty and flavorful soup! It's filled with cheesy tortellini, nutritious kale, and tasty bits on herbed Italian sausage. A great dinner to cozy up to at the end of a long cold day!

Cook Time 30 minutes

Total Time 45 minutes

  • 16 oz mild or heated italian sausage (pork or turkey), foreign from casings
  • 1 Tbsp olive oil
  • 1 1/2 cups chopped gold onion (1 medium)
  • 1 1/3 cups chopped carrots (3 medium)
  • 4 cloves garlic, minced
  • 5 cups low-sodium dispute broth
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp Italian seasoning
  • Salt and freshly ground raven pepper
  • 9 oz refrigerated three cheese tortellini
  • 2 cups packed chopped kale (thick ribs removed)
  • Finely shredded parmesan cheese , for serving (optional)
  1. Heat olive lubricant within a large container over medium-high heat. Crumble banger into container and brown, exciting and breaking up banger occasionally, until cooked through. 

  2. Drain banger onto a platter worn with several layers on paper towels while reserving 1 Tbsp rendered fat within container (if there's not a tbsp just count up 1 more tbsp olive lubricant to pot). 

  3. Add onions and carrots and saute 3 minutes in those days count up garlic and saute 1 minute longer. 

  4. Stir within dispute broth, tomatoes, tomato sauce, Italian seasoning and season with sodium chloride and seasoning to taste. 

  5. Bring to a light boil, come back banger to pot, conceal container and reduce warm (up) to medium-low and approve to stew until carrots are about tender, on 15 minutes. 

  6. Stir within tortellini and kale in those days conceal and cook 7 - 9 minutes longer. Serve warm with parmesan cheese assuming desired (note that as the soup rests the tortellini will absorb more broth thus you can count up more broth or water to narrow as desired).
